These are the toddler recipes from the toddler snacks page. Many great snacks require little preparation, like fruit. Other snacks require just a little more effort, though all of these recipes are pretty easy to make, and many can be used as simple meal ideas too, like the pancake recipes

Sweet Potato Pancakes

3/4 c. Whole Wheat Flour

3/4 c. White Flour

1 tsp salt

1/2 tsp nutmeg

1 TBSP milled flaxseed

1 1/4 c. mashed cooked sweet potatoes

2 eggs, beaten

1 1/2 c. milk

1/4 c. canola oil

Directions: Mix dry ingredients together in a bowl. In a larger bowl mix other ingredients. Add flour mixture to wet ingredients and stir just until dry ingredients are moist. Drop by tablespoons onto hot greased griddle or skillet and cook turning once until the pancakes are brown on both sides. Makes about 24 pancakes. Sweet on their own but can be topped with fruit, applesauce, yogurt, or syrup.

Freezes well.

Blueberry Pancakes

1/2 c. Whole Wheat Flour

1/2 c. White Flour

2 tsp baking powder

1 TBSP sugar

1 TBSP milled flaxseed

1/2 tsp salt

1 beaten egg

1 cup milk

2 TBSP canola oil

1 pint blueberries

Directions: Mix dry ingredients in medium bowl (not blueberries). In a separate bowl mix egg, milk and canola oil. Press dry ingredients up against the side of their bowl to make a hole in the middle. Pour milk mixture in middle and stir until ingredients are all moist.

Take 1/4 cup of batter and pour in heated pan or griddle (cook over medium heat, coat pan with non-stick spray before cooking). Add blueberries to the cooking pancake batter, about 7-9 blueberries per pancake. When batter starts to bubble, flip pancake over and cook until pancake is cooked all the way through. Take out of pan or remove from griddle. Keep doing this until all the batter is used. Top with applesauce, yogurt, or syrup. Or eat plain, the blueberries make them naturally sweet!

These pancakes freeze well!

Beef Sticks/ Turkey Sticks

1 lb lean ground beef or ground turkey

1 cup shredded carrots

1 egg beaten

Directions: In a medium bowl mix the meat with the carrots and the egg. When thoroughly mixed, take little handfuls of mixture and roll into sticks. Spray a frying pan and begin cooking the meat sticks in the pan, a few at a time, rolling them in the pan as they cook to cook them evenly. Cook until done. Beef should reach internal temperature of 160 F and ground turnkey 165 F( You could also place on a cookie sheet and bake in the oven at 375 F until cooked through).

Corn Tortilla with Avocado

3 corn tortillas

1 avocado

nonstick spray

Directions: Spray both sides of corn torillas with non-stick spray and put them in preheated oven at 375 F. Leave in for about 5 minutes. Meanwhile remove avocado’s skin and pit and mash until smooth.

Fill each corn tortilla with 1/3 of the avocado mix and roll up.

You can add additional ingredients if you prefer like diced tomatoes or cheese.

Cheese Quesadilla made with Whole Wheat Tortillas

Cheese Quesadilla

2 Whole Wheat Flour Tortillas

1/2 c. cheese
Optional:

tomatoes, onions, mushrooms, olives, peppers, broccoli, cauliflower

Directions: Put a tortilla on a microwave safe plate, sprinkle cheese on top (and any diced vegetables you may want to add). Put 2nd tortilla on top. Place plate in microwave and microwave until cheese is melted. Cut into pieces and serve.

You can also cook these in a pan sprayed with nonstick spray. Heat until cheese melts.

 

Sweet Potato French Fries

sweet potato fries

2-3 large sweet potatoes

nonstick spray

preferred seasoning (paprika, or salt & pepper, or pumpkin pie spice)

Peel sweet potatoes and cut off the ends. Then cut sweet potatoes into french frie sized strips. Spray all the strips thoroughly with the nonstick spray and sprinkle with any preferred seasonings.

Bake on a single layer on a cookie sheet at 450 F for about 25-30 minutes. Cook 10-15 minutes then flip all the fries over and cook for another 10-15 minutes. Let cool and enjoy!
